Gosh things have been busy! This weekend we had a big catering job for a conference on Saturday, followed by our bi-monthly vegan potluck dinner on Saturday evening with Karen Dawn as special guest speaker, and then on Sunday it was the Auckland Vegetarian Festival at ASB Showgrounds.
It all went very well, but I have to say I'm enjoying a (relatively) quiet week this week.
For the potluck on Saturday, my contribution was a big tray of mini meringues (using Angel Food meringue mix, of course!) with cocoa and dessicated coconut stirred into the mix. They're delicious! Very chocolate-y, crisp on the outside and chewy on the inside. There were complaints... that I didn't make two huge trays of them!
MACAROON-ISH MERINGUES
Make up one batch of Angel Food meringue according to the directions on the pack.
Add 2 tablespoons of sifted cocoa, 1/2 cup fine dessicated coconut and 1/4 teaspoon coconut essence.
Stir with a rubber spatula.
Use a broad nozzle to pipe small meringues.
When the meringues have cooled, dress them up with a splatter of melted dark chocolate and a sparse sprinkling of coconut.

SInce I knew that Angel Foods is New Zealand based, I got my bf to check out where your foods were stocked in Wellington so that's good! But I'd love to get involved with other vegans so can you tell me a bit more about the bi-monthly potluck :D?
